Prepare the necessary ingredients: 2 free-range eggs, a small handful of scallion leaves (about 100 grams). Beat the eggs and chop the scallion leaves.

Heat a pan and add the chopped shallot leaves. Stir-fry over low heat to remove some of the moisture from the shallot leaves.

Pour the stir-fried shallot leaves into the egg mixture, add 3 grams of salt, and stir well.

Heat oil in a pan over low heat, then prepare to fry the eggs.
