Prepare the ingredients; blanch the chicken gizzards beforehand.

Heat oil in a wok over low heat. Add garlic sprouts and stir-fry with a little salt until they develop a tiger-skin pattern. Remove from the wok and set aside. Letting the garlic sprouts cool before stir-frying will soften them.

Add pickled chili peppers and shredded ginger and stir-fry.

Stir-fry the garlic sprouts after stir-frying, add soy sauce and oyster sauce for seasoning, add less cooking wine, and then turn up the heat to stir-fry until fragrant.

Turn the heat back down to low, then add the garlic sprouts and stir-fry until evenly mixed before serving.

Garlic sprouts taste better when they are stir-fried until they are soft and mushy.
