
I bought a box of potatoes, which sat untouched in a corner. Now that I have some free time, I'll make a simple and appetizing braised potato slices.

Steps for making braised potato slices

Peel the potatoes and slice them about the thickness of a coin, not too thin. Rinse off the surface starch. If you're not going to cook them quickly, soak them in water.

Slice the pork belly thinly and marinate it with a little salt and oil.

Prepare ingredients

Heat a pan with a little oil, add the pork belly and sauté over medium heat until fragrant and the fat is rendered.

Pour out the reserved oil and leave it in the pan to stir-fry the potatoes.

Using the rendered oil, add the potato slices and stir-fry over medium heat until the potatoes are no longer white in the center and can be easily pierced with chopsticks. Remove the potatoes and set aside, leaving the oil in the pan.

Heat a wok, add the side dishes and stir-fry until fragrant, then add the pork belly and stir-fry evenly.

Add the potato slices, a spoonful of light soy sauce, half a spoonful of salt for seasoning, and a little dark soy sauce for color. Gently stir-fry until the onions are cooked, then remove from heat and serve.

The potato slices were powdery and fragrant, with a slightly spicy flavor that went perfectly with rice. Even the stir-fried pork belly was incredibly delicious.

Try not to add water when stir-frying potato slices, as this may cause them to fall apart easily.
