Steps for making pickled mustard greens and braised razor clams

Preparation: As shown in the picture above, wash all ingredients and set aside. If the pickled vegetables are very salty, remember to dilute them with water!

Add ginger slices and meat slices to the pot and stir-fry until golden brown. Add gourd and pickled vegetables and stir-fry evenly.

Seasoning: Add 2g salt and 3g sugar to enhance the flavor.

Add 100ml of water and boil the gourd until cooked through. After the water boils, add minced garlic and pickled peppers.

Leave some broth in the pot, add the razor clams and cook for 2 minutes.

Add a light cornstarch slurry; otherwise, the razor clams won't absorb the flavor. The slurry will cling to the broth.

Sprinkle with chopped green onions and serve.
