Wash the king oyster mushrooms and tear them into strips by hand. The thickness depends on your preference. Tearing them into strips gives them a better texture and allows them to absorb the flavors of the seasonings better than cutting them into strips.

Blanch the torn king oyster mushrooms in boiling water for 3 minutes. This removes any unpleasant odor and makes them firmer. After blanching, remove them, drain the water, and squeeze out the excess water.

Pour a suitable amount of cooking oil into a pan and heat it to about 50% of its maximum temperature. Add the king oyster mushroom strips. Stir-fry over medium-low heat until the moisture evaporates and the surface of the mushrooms gradually becomes dry and slightly yellow. This process requires patience and takes about 5-7 minutes. Adjust the cooking time according to your preference; stir-fry longer if you like it drier.

Remove the stir-fried king oyster mushrooms from the pan, leaving some oil. Add sliced garlic and dried chili peppers, and sauté over low heat until fragrant. I like to add a little Sichuan peppercorn, which is also delicious, but it doesn't affect the flavor if you don't.

After stir-frying evenly, add cilantro (optional). Taste and adjust the salt to your liking (I usually find oyster sauce and light soy sauce sufficient). Then it's ready to serve. Alternatively, you can add barbecue seasoning directly without salt or other seasonings.
