Cut fresh pork ribs into small pieces. Place the ribs in a bowl, add half a spoonful of salt, and soak in water for 6 minutes until the ribs are submerged.

After soaking, drain the water. Add 1 press of oyster sauce and diced ginger to the ribs, stir well and let it sit for 5 minutes. Then add 1.5 tablespoons of sweet potato starch and mix well by hand (it is recommended to wear disposable gloves).

Heat enough oil in a wok to submerge the ribs. Add the well-stirred ribs and fry. First, fry over high heat for a while, then reduce to low heat and fry for a little longer. Finally, turn the heat back up to high before removing from the wok to make them extra crispy, until golden brown. Remove them from the wok and place them in a bowl. Don't discard the remaining oil; you can use it to cook other dishes. (Fry longer if you prefer them crispier; I fried them for ten minutes. Stir them frequently with a spatula during frying to prevent sticking and ensure better flavor.)
