Clean and wash the celery, then cut it into sections on a diagonal.

Cut the lean meat into strips.

Mix cornstarch with water to make starch water.

Place the lean meat in a bowl, add salt, cooking wine, and egg white, knead until sticky, then pour in cornstarch water.
