Prepare the necessary ingredients: cut 2 blocks of soft tofu into evenly sized slices, chop 4 scallions, mince a small amount of lean pork, and slice a small amount of fatty pork.

Heat a wok, pour in rapeseed oil to coat the bottom, then add pork fat and render the fat. Remove the pork and sprinkle a little salt into the wok. This is to prevent the tofu from sticking to the wok!

Place the cut tofu along the edge of the pan until it covers the entire bottom. Don't flip it yet; fry it slowly over low heat. After about 2 minutes, flip the tofu and fry the other side.

After frying until the surface is slightly golden brown, make a hole in the middle, put in the chopped lean meat, and stir it in the pan a few times with a spatula until the meat is cooked through.

Next, pour in an appropriate amount of boiled water along the edge of the pot, but do not submerge the tofu. Sprinkle the scallions evenly over the tofu, then add a spoonful of chopped chili sauce. For seasoning, simply add an appropriate amount of light soy sauce.

Cover and simmer over low heat for about 2 minutes.
