Steps for making homemade pickled fish

Slice the fish, add an egg white and two spoonfuls of cornstarch.

Add 2 tablespoons of light soy sauce and a little salt, put on gloves and mix well, marinate for about 10 minutes.

Marinate the fish bones with a little salt

Add ginger slices to warm oil, and when the oil is 70% hot, add the fish bones and fry until golden brown on both sides. Remove from the oil.

Add some ginger and a teaspoon of fermented bean paste, and stir-fry.

Once it reaches this stage, add the tomatoes and stir-fry.

Stir-fry the tomatoes until they look like this, then add the pickled cabbage and stir-fry until fragrant.

Add fish bones, boiling water, bean sprouts (your favorite side dish), and 1 tablespoon of soy sauce. After the water boils, reduce the heat to low, simmer, and taste. If it's not salty enough, add salt. Cook for about 5 minutes (depending on how cooked the vegetables are). Remove the vegetables (do not remove the fish bones).

Bring the soup to a boil over high heat, then reduce to medium heat. Add the fish slices and do not stir them after adding. Turn the heat back up to high and cook the fish slices until they change color (about 3 minutes on high heat).

Add the previously cooked side dishes, scallions, and sprinkle with chili powder (optional if you don't like spicy food).

Pour hot oil over it, and you're done! If you don't want to add chili powder, you can skip the hot oil step.
